Fatty acids are the building blocks of fat in the body and food. They are organic acids, carbon chains with at least one carboxyl group (COOH).
Fatty acids are essential in order the human body to function normally. These fatty acids are called Essential Fatty Acids and are  involved in the process of building healthy cells, maintaining brain and nerve function.
