A chemical property of vinegar is its acidity.


Vinegard is a diluted acid. It is acetic acid in water.


Acetic acid is CH3 COOH.


The group COOH is the carboxylic group and is what tells you that a compound is an organic acid.


COOH disociates in water into COO- and H3O+.


CH3COOH + H2O ----> CH3COO(-) + H3O(+)

All the substances that dissociate in water producing hydronium groups (H3O+) are acids.
