Why do we never see the moon next to, say, polaris?.

Polaris is near the North Celestial Pole and nowhere near the Ecliptic. The Moon's orbit is tipped by 5 degrees to the Ecliptic. An eclipse can only happen when the Moon is near the line of nodes.
